Zita Long

Canadian-Cambodian expat Zita Long spends most of his time thinking about dough. He’s the head baker at Bang Bang Bakery, home to Siem Reap’s best cakes and sourdough bread.

Zita visited Cambodia regularly from the time he was a toddler, and has lived in Siem Reap for more than a decade. Zita’s baking attire is heavily inspired by the countryside Khmer women who wear kramas wrapped around their heads and full pajamas in public.
